Welcome to Monsoons Restaurant (Mtwapa/Mombasa) - We have never thought of our restaurant as a temple of gastronomy, is just a place where the fish is fresh and exhilarating and the atmosphere is magic, alive and full of fun.

Responsibilities:

The "A la Carte Chef"under the direction of the Senior Chef is responsible for daily overall kitchenoperations for a renowned 12 table "A la Carte" restaurant, adhering to the Kenya’s MoH and County regulations, standards and expectations of food service and quality, freshness and presentation. The Sous Chef will assist culinary management with overseeing the culinary operations to include menu concepts and recipe standardization.

Essential Duties & Responsibilities:

Maintains and ensures that recipes, flavor profiles, consistency in quality, appearance and production time frames are adhered to for all menu / food items being produced and that all food items needed for production are available.

Controls all purchasing of food products and kitchen equipment.

Understands menu development techniques and development of recipes, plating guides and menu cards.

The individual in this role is responsible for food preparation, storing, and service delivery to customers.

Assist with food inventory tracking such as quantity of supplies ordered and estimated time of shipment arrivals. Together with the senior kitchen staff, Sous Chefs is in charge of such logistics.

Responsible for cleanliness, organization and preparedness of immediate work space and adjacent areas,

Delegate and coordinate tasks to Cooks and / or other kitchen staff for effectiveness in deliver.

Maintains acceptable attendance record and arrives in designated kitchen at scheduled time, in proper uniform and ready to work.

Perform other duties as assigned to support the efficient operation of the department.


Education / Experience / Qualifications:

High School Diploma, Certificate from accredited Food and beverage / touristic Institutes desired.

Vocational / Technical / Business certification in related field preferred.

Minimum two years’ experience of tourist hotel or similar A la Carte restaurant.

Possess advanced knowledge of single unit culinary operations.

Ability to handle hot kitchen, "A la Carte" kitchen cooking, and expediting of food during peak hours and periods of business in all stated areas.

Demonstrates knowledge of food preparation and presentation.

Capable of following procedures and taking direction.

Possesses the ability to read recipes, production lists and any other necessary collateral paperwork.

Must have good basic mathematical, organizational and communication skills.

Must be an exemplary employee and display the ability to work well with others.

Clean and proper work attire in accordance with company policy.

Must be reliable, pleasant and possess a good attitude.

Be able to provide good service and cooping with stress during challenging situations.


Requirements:

Proven experience in preparing continental food, familiarity with Mediterranean food an advantage.

Knowledge of various cooking procedures and methods (grilling, baking, boiling etc).

Ability to strictly follow all sanitation procedures

Ability to work in a team

Very good communication skills

Excellent physical condition and stamina

Diploma or equivalent
